Let me ask you something. Are you ready to have your world rocked by a vegan pancake recipe? I’m glad to hear it. This little recipe here is all about the goodness. Bring it. No cholesterol, no saturated fats and no trans fats, you won’t find any here. If you want a yummy, healthy start to your Sunday morning. A way to celebrate the Sabbath then this is it. Super easy and super tasty, I’m upselling it because it is that fucking awesome. I shit you not. We enjoy this vegan pancake recipe practically every friggin’ Sunday.
Now why is called Smiling Buddha’s vegan pancakes recipe? Because the Buddha is smiling down on you dude and blessing you with good karma every time you eat this pancake, damn, anytime you eat vegan recipes the Buddha is smiling, so don’t hurt the animals.
This is not a vegan pancake mix, some of those are good and I suppose you could make this in quantity to make your own vegan pancake mix but this is about the homemade pancake recipe and the goodness that comes from making something yourself. So let’s get down to business. Here’s what you need:
Wholewheat flour, baking powder, sugar, salt, ground flax seed, frozen blueberries, oil, soymilk and water.
Here’s how we roll with this recipe. It’ll make enough vegan pancakes for about 2 or 3 depending on who’s eating. Call it 10 to 12 4 to 5 inch pancakes. Now what I like to do is put some plates in the oven and set the oven temp to 150 just so the plates and the first pancakes stay warm. You could also use like 3 or 4 frying pans so you can cook 3 or 4 of these vegan pancakes at a time.
Okay, the deal is you mix all the dry ingredients first. So add 1 cup of flour, 1 tablespoon of sugar, 3 tablespoons of ground flax seed, 2 tablespoons of baking powder and a pinch of salt all together in a large mixing bowl. Then mix it right. Make them all one, living in perfect harmony.
Now take the 1 cup soymilk and add to the dry stuff. Add 2 tablespoons of oil to the dry stuff too, and add 1 cup of water to the dry stuff and mix it all together like you’re doing that bad dance I saw you try at that local dance club. You remember that right, awful, but for this it’ll work like a charm. Now a word to the wise vegans. That 1 cup water I told you to add can be played with… not like that, the quantity of the water can be played with. You want thicker vegan flaxseed blueberry pancakes then use less water you dig. The reverse is true too right, I don’t want to have to spell everything out.
Then when that shizzle is all nicely mixed, dump 1 cup of frozen blueberries on its face and mix that mother until it’s purple in the face. Yeah just like that. Are you tired yet? No, mix it some more then, pump those vegan biceps.
Now toss a non-stick frying pan on the stove and heat it as medium. You might want to do this when you started mixing the dry ingredients all together. That’s a free tip for you. When the pan is hot, dump around a 1/3 of a cup of the Smiling Buddha’s vegan pancake mix onto its hotness and watch it sizzle. when the top of the pancake bubbles slightly and then leaves pockmark divots in its face like a carnivorous teenager’s face stuffed full of cheese and his zits are popping like bubble wrap you’re ready to turn it over. You’re also ready to erase that last image I planted in your mind, so you can enjoy a yummy vegan pancake without thinking of disgusting puss filled teenaged zits. Enough already, stop thinking about that shit 🙂
When each vegan pancake has cooked enough on each side flip it onto a plate and leave it to stay warm in the oven. If you can’t flip it like a fool then use a utensil, we don’t want them ending up on the floor. You’re done when you’ve emptied the bowl and cooked the last pancake. But I bet you knew that clever vegan.
Enjoy with syrup, margarine or whatever else you like. But don’t you dare put butter on these gentle vegan pancakes. Hell hath not fury like a vegan pancake sullied.
