I like to play around with my food. Not like how you might be thinking, rather I like to experiment with different meals and recipes. Sometimes I like to have a lunch meal for breakfast or a breakfast meal for dinner. And today we’re having a healthy breakfast vegan from a recipe that my wife made up.
This could serve as a really tasty vegan lunch too, and I’m sure this would make a delicious healthy vegetarian breakfast. It’s got that gooeyness that we love from cheese. But it’s not cheese.
So what shall we call it. I don’t think I’ve ever given this high protein vegan breakfast a name. I think I’ll call it Angel toast, ‘cos it tastes just like a little piece of heaven 😉 Plus my wife came up with this is awesome vegetarian recipe and she’s an angel.
Okay, enough of the sweet sappy stuff. I hope you guys will want to try this easy vegan breakfast recipe out. Everybody who has tried it has loved it. It might sound like a weird mix of vegan ingredients but give it a whirl.
What you’ll need:
2 slices of bread
margarine
mixed greens salad
4 slices of Tofurky deli slices – your choice
1 medium tomato
1 sweet red onion
1/2 cup Daiya cheddar style shreds
salt and pepper to taste
Now this is pretty filling. If you’re an athlete or a construction worker this will be a great vegan breakfast or vegan lunch for you. If you’re a vegan vixen or just looking for something a little less filling, just halve the recipe.
You’ll also need a toaster and a toaster oven. Okay let’s get to making our easy vegan breakfast.
Toast the bread until lightly brown. While the bread is toasting, cut the tomato into coins – the whole tomato (you’ll need 8) – and thinly slice the red onion however you like using about an eighth to a quarter of the onion.
Once the toast has finished toasting place it on a plat or cutting board and slather with vegan margarine or Earth Balance. On top of the toast now place a good layer of mixed greens. On top of the greens place 2 vegan deli slices. On top of the veggie deli slices place 4 coins of tomato. On top of old smokey all covered in… oops that’s not right!
On top of the tomatoes generously place your slivered onion slices. Lastly, liberally sprinkle Daiya cheese on to of everything. Gently place your beloved toast on the middle rack of a toaster oven set at the “toast” or “broil” setting.
After a few minutes – you’ll have to eyeball it – when the vegan cheese is so yummy and gooey take out of toaster oven and place on a fancy plate. Sprinkle with salt and pepper and eat with a knife and fork.

Around 600 to 700 calories depending on the bread you use and how liberal you are with the margarine and cheese.
