So I was having my sister over for lunch the other day and I wanted to make something nice and tasty. I remember enjoying this product by Morning Star I think it was called Tuno. It was fake tuna made from soybeans and it tasted great. So I started searching around the internet for mock tuna recipes and didn’t find anything I really liked, so I made my own vegan mock tuna salad sandwich recipe. You’re gonna love it or your money back. Every penny you spent to get here. Oh right… that was nada.
For shame, you’re gonna love this vegan seafood recipe for free then. Now whenever I cook I just like to roll with my ingredients. So what I’m going to list here are approximations of how much I used in my vegan tuna recipe. So adjust according to your own taste. Listen, food is a journey and not a destination so have fund with it.
You’ll need a food processor or blender to use to mix everything up. I’ve tried chopping up the veggies and mashing the chickpeas with a potato masher but honestly, it just doesn’t work very well. Blending everything is a lot easier and quicker. This whole thing shouldn’t take you longer than 10 minutes to make. This is a super fast vegan recipe that is very easy to make.

Chickpeas
Relish
Mustard
Celery
Vegan Mayonnaise
Lemon Juice
Sea Salt
Onion Powder
Garlic Powder
Nori
Green or Spring Onions
This is how to make vegan mock tuna salad sandwiches. You don’t have to use it as a vegan bread spread I bet it would also go great into avocado halves too.
I use one can of chickpeas that I’ve rinsed and throw them into the food processor or blender. In fact, you’ll be tossing everything into your blender or processor at once. Use around 2 teaspoons of relish, and by that I mean a regular teaspoon that you use to stir your Rooibos or other tea/coffee. Add around a teaspoon or so of hot mustard. I chopped up 2 stalks of celery into half inch or so slices and tossed those into my processor.
Then about a quarter cup of vegan mayonnaise or more. I splashed in some lemon juice. If you bent my arm I’d say it was probably a couple of tablespoons. I also shook some sea salt into the mix. Maybe that ended up being a quarter teaspoon or so. Same with the onion and garlic powder, but shake in maybe about half a teaspoon each.
I broke into pieces about a sheet and a half of nori into my mixer. I also broke 2 green onions into the mix. Then when everything is in your processor blend it for a minute or so. Then unplug and with a wooden spoon turn the outer sides of the mix into the middle and blend again. Do this a couple of times to make sure the mixture gets all nicely blended.
If you put this vegan tuna spread in between two slices of hearty bread, this will be one of your favorite and best vegan meals ever. Word to your (vegan) mommy. This is also one of those easy vegan recipes for college students, your roommates will love it.
