Best Vegan Recipes – Vegan Chocolate Chip Cookies With Bananas

My wife brought these vegan chocolate chip cookies into work the other day and they were a huge success. She took them in with the vegan banana bread I wrote about yesterday. A few folks even asked for the recipe. Spreading the vegan word through the front line assault on peoples bellies!

Anyway, just like with the banana bread, this is a super healthy vegan chocolate chip cookies recipe as far as cookies go. Although unfortunately it isn’t going to be able to replace the Brussels sprouts in your diet.

Having no eggs these cookies therefore also don’t have cholesterol so they’re better for vegetarians too. And because they have no cholesterol or eggs they have lower fat than regular chocolate chip cookies.

Also, the bananas give such a great complimentary flavor to the cookies and add, dare I say it, another dimension of health.

So eat as many as you want every day and you will stay slim for the rest of your life… I joke 😉 As with any desert or sweet, moderation is the key. This recipe will make around 36 vegan banana chocolate chip cookies depending on how generous you are with the spoon you use to drop them onto the baking sheet.

Let’s get ready to ruuuuuuumble with the vegan cookie monster!

Chimp’s Chocky Cookies

2.5 cups all purpose flour
2 tsp baking powder
0.5 tsp salt
0.25 tsp baking soda
1 cup white sugar
0.66 cups of margarine
2 Tbsp finely ground flaxseed
1 tsp vanilla extract
1 cup mashed bananas (that’s about 3 average very ripe bananas)
1 cup semisweet choc chips

Preheat oven to 350. Grease cookie sheets and prepare the egg replacer which is as follows: Take the 2 Tbsp ground flax and mix it with 6 Tbsp hot water. In between preparing the rest of the ingredients mix the flax and water mixture regularly. After some time (about 5 minutes) it will start to become thicker and somewhat gooey. That’s when you can use it.

In a smaller of 2 large bowls mix together the flour, baking powder, salt and baking soda and set aside.

In the larger of 2 large bowls cream the butter and sugar until light and fluffy. If you have a kitchen mixer lucky you, all the better 🙂 Beat in the flax egg replacer and vanilla. Mix in the mashed bananas.

Add the flour mixture to the wet ingredients and stir until just mixed. THIS IS MUY IMPORTANTE!! Mixing too much at this stage and the cookies will not be nice and moist and fluffy when cooked and the chimp will very, very unhappy.

Stir in the choc chips. Drop by spoonfuls on cookie sheet.

Bake for 12 to 15 minutes. 12 for a softer chewier cookie, 15 for a crisper cookie.

There you have it vegan + cookies + chocolate + bananas = a very happy chimp and a very full belly for you.
